Ng'khaya — Coming Home

Every Kumba supper begins in Zimbabwe — and travels.

Zimbabwe is our cultural anchor and creative lens. But Kumba is not a Zimbabwean supper club alone. Each menu begins with heritage and opens outward into the wider African diaspora — the cooks, songs, migrations and memories that shape how we eat today.

We honour the recipes that raised us, then carry them forward with new influences, techniques and questions. The table is where the old and the arriving meet, and where culture stays alive by moving.

Zimbabwe is the anchor. The diaspora is the conversation. The table is where they meet.

Harvested & Fuelled

What do we harvest, and what becomes our fuel. Completing my masters degree was a seed — it pushed me to create these suppers, to bring the table to life. Studying nutrition taught me that wellbeing is not only the food we eat and ingest; it is whether we make time to sit together at the table, share a meal, open up, laugh and break the week. Our cultural food is packed with abundant nutrients that keep our bodies well — and we need a space that reminds us to keep our heritage food in our diets. October is the main harvest season: grains, apples, pumpkins, squash, potatoes and root vegetables gathered before winter, ready to carry nourishment forward.

The Menu Journey

  1. 01Chingwa neMoto — Bread & Fire — Quinoa-crusted brioche, boerewors. A guest fav, we had to bring it back.
  2. 02Kuzorora — The Pause — Granadilla juice, mint.
  3. 03Goho — The Harvest — Slow-braised beef shin, coconut rice cake, chargrilled mangetout, caramelised miso butter. Rice sautéed in shallots, butternut squash, roasted red peppers — moulded, breadcrumbed and fried.
  4. 04Pamoto — Around the Fire — House rub chicken niblets, guava chilli glaze, charred corn. Our in-house signature preserve.
  5. 05Kutapira — Sweet Fields — Toffee nut ice cream, maputi crumble, salted caramel.

Our first supper — an introduction to the table. Using Zimbabwe as the cultural anchor, I built the menu through my culinary journey and a nutrition lens, mapping how heritage, ingredients and intention come together to shape a meal.

  2. 02Fireflame — Braai poussin, thrice-cooked sweet potato chips, butter bean aioli.
  3. 03Earth (V) — Charred miso cauliflower, warm grains.
  4. 04The Pause (V) — Tomato consommé shot, elderflower · verjus.
  5. 05Warmth — Rum & vanilla polenta cake, guava chilli sorbet.
  6. 06Zambezi Mocktail — A celebration drink to close the evening.

After a trip back to Zimbabwe, the second supper featured Gango — bringing childhood memories and traditional Zimbabwean food to the table. The menu deepened the conversation between heritage and the diaspora, each plate carrying memory and fire forward.

  1. 01Embers & Guava — Braai wings in a smoked spice rub, guava chilli preserve, crispy shallots.
  2. 02The Pause (V) — Cream soda lemon granita — a cold breath between fire and feast.
  3. 03Gango — Sadza, chaka beef, boerewors, greens, chakalaka.
  4. 04Mammox Fried Rice — Braised goat — an ode to Aunt Powiee, golden fried rice layered with memory, comfort and fire.
  5. 05Childhood — Vanilla baobab ice cream, dipped in white and milk chocolate.
  6. 06Cocktail(s) — Zimasa vodka, elderflower spritz, mango and hibiscus.

Music is our centrepiece for this supper — the song we carry wherever we go. We take guests on a Southern African arc of how music travels: from Tuku to Hugh Maseka, blues, jazz, Uptown music, kwaito and amapiano. Music reminds us of the stories we carry, our freedom, customs and values; how we express culture, and how — although we migrate — we don’t freeze time with culture but carry it forward and adapt with what is current. The menu takes a creative spin on what happens to our food when we migrate: Zimbabwean cuisine should thrive anywhere, but how do we elevate and innovate with what we have, where we are.

The Menu Journey

  1. 01Embers & Rhythm — Reimagined Boerie Roll — Charcoal bun, boerewors kofta (beef sausage), guava chilli aioli, whipped amasi labneh — a creamy, tangy cultured milk labneh, whipped until light and silky, rooted in tradition and reimagined for the table — crispy onions, fresh parsley. Paired with South African rosé.
  2. 02Coastal Notes — Braaied Skate Wing — Harissa brown butter, charred lemon, herb oil, pickled fennel.
  3. 03The Pause — Naartjie Sorbet — Citrus, mint.
  4. 04The Gathering — Apricot Glazed Wings — Chakalaka pearl couscous, grilled summer greens, pickled cucumber. Paired with South African chenin blanc.
  5. 05Sweet Memories — Malva Moments — Warm malva sponge, rooibos caramel, vanilla cream, lime zest, powdered sugar.
  6. 06Welcome — Kumba Spritz — A celebration drink to close the evening.
